My favourite of all time, always has been and always will be Cowboy Bebop. It might be a mainstream choice, but damn if it isn't good.

Full Metal Alchemist (not the Brotherhood one, haven't seen that) is a great series. The anime film 'A.K.I.R.A' is also very good if not a little obsessed with people being crushed to death (it happens, like, a LOT).

I want to see all animes! But I know I won't have the time/money nor the patience to find them...

Bleach and One Piece are really the best. Fullmetal Achemist and Cowboy Bebop are quite good considering what I've watched of them. Trigun is a good anime too and about as long as Cowboy Bebop. Although Afro Samurai is by far the best in terms of cast list. Samuel L Jackson, Ron Pearlman, John DiMaggio (Bender) and Phil LaMarr (Hermes) among others voicing characters.

I love the music for Bleach and One Piece! And is Afro Samurai that one where Samuel L Jackson's character has sex?

Soul Eater is also awesome, but the way they ended the series annoyed me. Are they going to do a second series or just leave the anime?

Nah, the anime's finished where it is I think. And I was quite fond of the ending myself.
Trigun, awesome show, awesome intro. Although I still ain't seen the end of it.
Gundam, anyone?

Ah that's disappointing for Soul Eater. I was a good anime and died badly in comparison to the rest of it.
I don't watch Gundam, too many series to keep track of. Like .hack// too.
